2/3rds of our potatoes have been harvested. This morning August and I weighed them and we have over 40 pounds of potatoes in our basement. Some we sorted to put away in a cool, dark spot for the winter months and some we will can for fried potato and egg breakfasts or quick and easy soup ingredients.
Potatoes are one of my favorite vegetables to grow. They pop out of the earth like tiny dinosaurs emerging from their shells, cracking and pushing the earth aside to make room for their little leaves to stretch and grow. When it's time to harvest, we find it to be much like finding buried treasure. You just never know how many or how big those treasures deep in the earth will be!


Canned potatoes for breakfast - what a thought. I'm going to have to plant more potatoes next year.
